BBQ Chicken & Cheddar Foil Dinners

The other day I was trying to search out a yummy new HEALTHY recipe. This is what I settled for. I found it on the Calorie King website. They are very easy and quick to make plus they are pretty yummy! It was also something fun to mix the normal swing of things in the winter! But it made us long for summer and campfire cooking!

BBQ Chicken & Cheddar Foil Dinner

  • 3 Tbsp barbecue sauce
  • 4 small boneless, skinless chicken breast halves (about 1 lb)
  • 2 small unpeeled red potatoes, thinly sliced
  • 1 red or green bell pepper, seeded and sliced
  • 1 green onion, finely chopped
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 1/2 cup shredded reduced-fat Cheddar cheese

Preheat oven to 375ºF.

Place a foil sheet, approximately 12 x 12 inches, on a work surface. Spoon about 1 teaspoon of the barbecue sauce in the center of the foil sheet. Place one chicken breast half over barbecue sauce and spread another teaspoon of sauce over chicken. Top with a quarter of the potato, bell pepper and onion. Sprinkle with a little of the salt and pepper.

Fold foil in half to cover contents; make narrow folds along edges to seal. Repeat with remaining ingredients to assemble three more packets. Place packets on a baking sheet and bake for 35 minutes.

Open foil packets with scissors and carefully pull back edges (contents may be very hot). Sprinkle a quarter of the cheese over the top of each chicken breast half and return to oven, unsealed, for 2 minutes or until cheese is melted. With a spatula, transfer the contents of each packet onto individual serving plates, if desired.

Oatmeal Craisin White Chocolate Cookies

This weeks recipe is as you might have already guessed, Oatmeal Craisin White Chocolate Cookies! I absolutely love Oatmeal chocolate chip cookies. So, I thought that this would be a good mix to things! The craisins and white chocolate go so well together, they are just to die for! My oatmeal cookie recipe is from a family cookbook that I have so I'm not sure where it comes from but I'm thankful for it. The best part of oatmeal cookies is that they are so chewy. The BEST!
Oatmeal craisin white chocolate cookies

1c butter
1c sugar
1c brown sugar
2 eggs
1 tsp. vanilla
2c flour
1/2 tsp salt
1/2 tsp baking powder
1tsp baking soda
2c oats
1pkg white chocolate chips
1c craisins

* Mix the butter, sugars, eggs and vanilla until creamy. Blend together the flour salt, soda and baking powder and add to the butter mixture. Add the oats, chocolate chips and craisins. Oven temp- 350 degrees. For 8-11 minutes or until golden brown. Enjoy!
